The refrigeration system keeping food cold and fresh across the globe is probably one of the most underrated pieces of modern technology, argues Nicola Twilley in a piece for Cabinet Magazine. Now, the global "coldscape" touches some 75 percent of the food consumed in the US, despite mass refrigeration only springing up over the last century. Twilley believes that the story of refrigeration is "central to every aspect of our national postwar narrative" and breaks down in exhaustive detail different technology (including the "cheese cave" and the "sushi coffin") that brings food to our tables. It's a fascinating, in-depth look at technology that is rarely seen or praised, but that we'd have a hard time living without.
